Commercial quantities of 5-25kg of citric acid are available in the wholesale section of the website.
Use 1 teaspoon per gallon / 5 litres of fruit wine or as per your recipe. Generally (unless your recipe says otherwise) add the acid at the same time you add sugar, nutrient etc. Or you can calculate the amount to add if you are using an acid testing kit.
