GO-FERM® Protect, professional winemaking yeast nutrient / protectant.  This product is a modern product which is more scientifically advanced than nutrients usually available for the home winemaker.

You will need a nitrogen nutrient in addition to Go-Ferm Protect.  makewine.co.nz sells Fermaid A

Use ratio of 1 part yeast:1.25 parts GO-FERM®

1/2 tbsp - about 6g (for 1 batch of wine up to 23 litres) 
125g = (20 batches of wine up to 23 litres)

Use GO-FERM® Protect at the yeast rehydration stage. To "pitch" (add it to your wine) your yeast you should rehydrate for 20 minutes first:

  • Use room temperature or luke warm good drinking water (filtered and/or boiled) - 50mls for 5gms yeast.
  • Add GO-FERM® Protect first
  • Then add your yeast.
  • Stir gently - it will clump but don't worry about that as it will even out as it rehydrates.
  • Leave to sit for 20 minutes.
  • Make sure your wine is about the same temperature as the yeast when you stir in the yeast.

The GO-FERM® approach is to provide bioavailable micronutrients in the non-stressful environment of the yeast rehydration water instead of the traditional method of adding micronutrients to the must. During rehydration, the yeast acts like a sponge, soaking up GO-FERM® bioavailable nutrients. This direct contact between GO-FERM® and the yeast in the absence of the must matrix avoids chelation of key minerals by inorganic anions, organic acids, polyphenols and polysaccharides present in the must.

The use of GO-FERM® results in significantly better overall health of yeast cells through-out the fermentation, affecting fermentation kinetics and resulting in a cleaner aromatic profile.
