CRISTALINE® is a fish fining agent. It eliminates bitterness and refines wines allowing total elimination of the smallest particles.
Dosage:
Light fining - 1-2 g/hL
Heavy fining - up to 4 g/hL. Over 2 g/hL will require addition of tannin or silica gel
Instructions:
Try to only mix up the amount you need to use.
Disperse in 50x its weight in COLD water. ie 2g to 100ml water
Stir vigorously - a stick blender is ideal.
Leave to swell for several hours.
Stir again and add an equal amount of cold water.
Use 200ml of the resulting solution per 100L of wine. ie 10ml per 5L wine.
Refridgerate any leftover solution and use as soon as possible.
Mix through the wine and filter in 2-3 days or rack in 2-3 weeks.
Can be used with another fining agent to help compact lees (sediment) &/or after another fining agent.
